I know it's supposed to have 15 different settings, but I can't find them. I have it on the setting below auto, pressed the function/set button and found the program, portrait, night snapshot, kids & pets, indoors, and face self-timer, but nothing else. How do I find the others that it's supposed to have (beach, underwater, etc.)?

If you're trying to find the extra Scene modes (called Special Scenes) such as beach, foliage, snow and fireworks, etc...then why don't you simply look up...beach, foliage or snow etc...in the Index at the back of your User Guide??? They are there.
And they will direct you to the appropriate page and show you how to select them.

P.S. using the Underwater Special Scene doesn't mean you can automatically shoot underwater. You first NEED to buy a special waterproof casing (WP-DC36) to protect your camera so you can shoot underwater...lol...they cost approx. $175 from Amazon.

Going to Magic Kingdom in June - any ideas on where to get coupons and what about the fast pass?

How much is the fast pass and do you suggest buying that? Any ideas to get coupons? How about what I should carry - should I do a purse or a backpack - I have kids but do not want to worry about leaving my backpack while I go on a ride. Any suggestions about this would be appreciated.

I definitely suggest using Fastpasses - but they are FREE!! You just put your ticket into a Fastpass machine, and it spits out a Fastpass with a time for you to return with little waiting. When you come back during your assigned time, you get into the Fastpass line instead of the regular line. So yes, take advantage of it! Disney lists all the rides that offer Fastpass on their website, and the maps all show a little icon by the rides that use it, too.
Coupons - sorry, it's Disney. They don't really do coupons. However, if you will search online for Orlando Board of Tourism and Florida Board of Tourism, go ahead and request free information from them. They might have coupons you can use for other things, for example, restaurants outside of Disney or other attractions. It's free, might as well request it.
I always try to carry as little as possible into the parks, personally. A great tip that my family has discovered is to get a waterproof bag to take, a beach-bag type. That way, you don't have to worry about taking it with you on water rides! Your camera, cash, etc., stays dry. And they come in all different sizes and very cheap. I have always been able to carry them on all the rides comfortably. I don't like to travel with a backpack because they are a little bulkier, in my experience, and a little harder to negotiate with on rides.
